This Goan vegetable curry is seriously good and easy to make, plus it’s Vegan! Simply pre cook your veggies add the Holy Cow! Goan curry sauce and enjoy this flavoursome and well-balanced meal.

Serves: 2 people
1 tbsp olive oil
150g frozen vegetable mix
250g Holy Cow! Goan curry sauce (1 pack)
250g microwavable basmati rice
1. Heat the olive oil in a large saucepan.
2. Add the vegetables and cook for 2-4 minutes until softened.
2. Add the Holy Cow! Goan curry sauce to the vegetables and simmer for 4-6 minutes, until cooked through.
4. Meanwhile microwave rice
5. Serve with rice or naan.
